There’s nothing quite like the comforting mouth watering aroma of freshly baked chocolate chip cookies wafting through the kitchen. Crispy at the edges, soft and chewy in the centre, and dotted with melty pockets of chocolate. Chocolate chip cookies are a popular treat for children and adults alike. They make a delicious treat that never goes out of style. Whether you’re baking for a special occasion, sharing with family or friends, or simply indulging in a little homemade sweetness, this recipe brings together simple ingredients to create something unforgettable. Homemade versions are most often far nicer than shop bought options. So grab a mixing bowl and maybe a glass of milk because you are about to make a batch of pure heavenly cookie joy.

Chocolate Chip Cookies
This recipe was for a large portion for a family get-together. If you are looking for around 8-12 cookies then make half of the quantity below. The amount of cookies will depend on the size that you decide to make.
Ingredients
250g caster sugar
250g brown sugar
340g butter
2 teaspoons of vanilla bean paste
3 medium eggs
540g plain flour
2 tsp baking powder
1/2 tsp salt
60g milk chocolate chips
Method
Mix the sugars and the butter and whisk until they are fluffy and lighten in colour.
Add in the vanilla bean paste and the eggs and mix in well.
Then add the flour and baking powder and combine.
Portion out the cookies onto a baking tray lined with greaseproof paper. Leave a fair amount of space and do not make the portion sizes too large or the cookies will merge together.
Cook these at 190 degrees for 8 to 10 minutes in a fan assisted oven until they become a beautiful golden colour.
Remove the cookie tray from heat and allow them to cool a little. This allows the cookies to firm up and means they are less likely to fall apart when you eat them.
Chef Tips
You can make a big batch and freeze the dough in batches and use this as and when needed.
Frozen dough can be left in the freezer for up to 2 months. This makes it easy to make these for an afternoon snack provided you remember to take the dough out to thaw.
Frozen dough will take roughly 1-2 hours to thaw at room temperature (depending on your room temperature)
Chocolate chips can be swapped for other ingredients should you prefer.
These can be kept in an airtight container at room temperature for about three day. They last longer (approximately one week) if kept in a fridge.
These chocolate chip cookies are best enjoyed warm, shared generously, and revisited often because once you’ve made them, they’re sure to become a repeat favourite. Whether you pair them with a cold glass of milk or sneak one straight from the cooling rack, enjoy every perfectly gooey bite. Happy baking!

Why do you use caster sugar instead of white and brown? Is there a reason specifically?
The caster sugar is a white sugar. The combination of white and brown sugar allows for a balanced texture. The white gives crispy edges, the brown adds moisture and chewiness.
