I made these brownies again recently. This time it was for a friends birthday party. She is a hardcore chocoholic and loves brownies and other sweet treats. And guess what, her and all the other guests had no idea that they contained olive oil or courgettes. This gooey, chocolatey, recipe is egg free and can be made in advance if required. The best thing is the brownies are super easy and quick to make. They are a great way to make brownies a little healthier and make a fabulous sweet treat for a range of occasions.

Brownies with Courgette / Zucchini
Ingredients
230g finely grated courgette
45ml light olive oil
1 teaspoon vanilla bean paste
190 caster sugar
120g plain flour
30 cocoa powder
1/2 tsp bicarbonate of soda
1/2 salt
60g milk chocolate chips (dairy free if you prefer)
Method
Preheat a fan oven to 180 degrees.
Line an 8 inch tin with greaseproof paper and then grease with light olive oil or butter if you prefer.
Clean the courgette, trim the ends and grate.
In a large bowl, add the flour, sugar, bicarbonate of soda, salt and cocoa powder and combine well.
Lift handfuls of the shredded courgette over the mixing bowl with all of the dry ingredients and squeeze it well so the juices drip into the dry ingredients. Repeat with all of the courgette.
Add the olive oil, vanilla bean paste and the chocolate chips and then mix all of the ingredients. Press as you stir to release more liquid if needed. This will form a thick batter.
The batter should look shiny, and it should be thick. No one wants a runny batter!
Add the batter to the tin and place in the oven for approximately 24-26 minutes at 180 degrees.
Additional chocolate chips can be added at this stage if wanted. These melt on top of the hot brownies.
Chefs Tips
This great brownie recipe can be made a day or 2 in advance making them a great time saver.
These are amazing served with vanilla ice cream.
I like to make mine in a square tin as it makes it easier to cut small portions, knowing full well everyone will be coming back for seconds and possibly thirds too!!
The brownies will last between 3 and 5 days when stored at room temperature in an airtight container or up to a week in the fridge.
The brownies can also last up to 2 months in the freezer.
The courgette does not have to be peeled before use. I grate mine with the skin on. It cuts the prep time and the sin contains fibre, vitamins C and B6, and antioxidants making it a great addition that no one will suspect has been added.
Milk chocolate chips can be switched with dark or white. Alternatively use a combination of all three chocolate types.

This is definitely a spin on a recipe that I haven’t heard of. I have done sweet potatoes, and black beans in brownies. Anyway to hide the good stuff.
I’ve done sweet potatoes brownies before which are also wonderful. I’ll need to check if I’ve shared the recipe and if not get that up too. I’ve been wanting to make the black bean ones but haven’t gotten that far yet. They are awesome to hide healthy ingredients with no one knowing!

Sugars can be changed or you could experiment using dates.
These brownies look so fudgy and chewy ooey! I like that the recipe is egg-free and intrigued that is uses olive oil / courgettes.
