Looking for a quick, easy recipe that works well for adults and kids as a snack, appetiser, or part of a spread for a party or picnic? I have just the thing. My Mozzarella Jalapeno and Bacon Twists. These are easy to whip up and cooking time is super quick if you make it in an air fryer. I use my newest kitchen toy The NEW 11 litre Swan Brand Twin Stack Air Fryer to make my latest recipe, Mozzarella Jalapeno and Bacon Twists. These delightful bites will soon be the morish savoury snack your family will be craving.
These tasty twists are extremely moreish. My advice in hindsight, multiply the ingredients by 2-3 or run the risk of sparking a war within your household like I almost did. Big mistake!!! Who knew they’d be so good. The bonus is they are really fast and easy to make especially when cooking in an air fryer. The Swan Twin Stack Air Fryer is ideal for this as I could cook more at a time than in a single Air Fryer as there are 2 baskets, plus each basket can hold 2 layers.

Mozzarella Jalapeno and Bacon Twists
Ingredients
1 x 320g sheet of puff pastry
50g grated cheddar cheese
65g shredded mozzarella
20g ready sliced jalapenos in brine (place on a tissue to soak up the brine before cutting. No need to rinse)
3 raw unsmoked bacon medallions
1 medium egg
Method
Cut the bacon into into small pieces and set aside.
Grate the cheddar and place in a small bowl or container.
Cut the larger pieces of jalapeno into smaller pieces and to make sure that the pieces are all similar in size.
Crack the egg into a small bowl. Give it a quick whisk with a fork until the white and yolk have fully combined.
Remove the puff pastry roll from the fridge and the packaging and gently unroll it. You may need to allow it to warm up for a couple of minutes when unrolling the past part so it doesn’t crack.
Leave the puff pastry on the greaseproof paper that it came wrapped in.
Fold the puff pastry so you can see where the half line is.
Sprinkle the mozzarella, jalapeno pieces, on one half of the puff pastry.
Add about 40g of the cheddar cheddar and most of the back of the bacon. Leave a little bacon to sprinkle on top of each twist – you don’t need much.
Flip over the other side along with the greaseproof paper to cover. Then press down on the paper to help ensure most ingredients stay where you want them.
Then unfold the paper and cut the puff pastry into 8 even strips.
Twist each of the strips approximately 3 or 4 times carefully so the filling stays in. You can always poke bits that escape back in.
Brush each strip with a little of the egg.
Sprinkle over the remaining cheddar and bacon.
Place in the air fryer at 200 degrees and cook until the twists are golden and have have puffed up.
This should take about 13-14 minutes.

Chefs Tips
These are best served hot. If like me you have locusts that hover around you when you are cooking or creating new dishes that won’t be an issue. If they have been made by chance when everyone is out, they can be easily reheated in your air fryer within minutes.
You can swap out the cheeses for others if you prefer.
Or, add parmesan on top when finishing up instead of cheddar for an extra flavour addition.
I use jalapenos in brine, but fresh ones can be used instead. If you use fresh jalapenos be aware that hey may have ore heat so you may want to use less.
By a block of cheddar cheese and grate rather than buying pre grated as this works out more cost effective.
Leave out the bacon to make this vegetarian.
You can add a little coriander which adds a lovely fresh flavour.

Swan Brand Twin Stack Air Fryer
This great appliance minimises the amount of worktop space that is used in the kitchen (by about 30%) making it a great option to consider if you need an air fryer. Whether you have a large or small family this air fryer is perfect as there are two 5.5 litres baskets so you have a total cooking capacity of 11 litres. You can use them independently. Each of these baskets is able to fit and cook a whole chicken. This is a pretty smart device. I like that this air fryer has windows so you can keep an eye on the food so as not to overcook it when playing around with the manual control. The cyclone technology allows for food to be cooked quickly and evenly between both baskets. This can save up to 67% off electricity bills compare to an oven.
