Vanilla and Raspberry Cupcakes

Cupcakes are a super yummy treat that everyone enjoys. They’re great for birthday parties, weddings, Christenings and simply as a treat for the family, or when you have guests. My raspberry and vanilla cupcakes are a great option when choosing what to flavour you’d like. They are both simple and tasty and look impressive too with minimal effort.

Ingredients

For the Cupcakes:

210g Butter at room temperature / softened

210g Caster sugar

3 Medium eggs

210g Plain flour

1tsp baking powder

1.5 tsp vanilla bean essence

2tbs milk

For the Butter Cream:

240g Butter at room temperature / softened

460 g icing sugar

150g fresh raspberries

12 whole raspberries for the topping

2 tbsp lemon juice

Method for the Cupcakes

Preheat the oven to 160 degrees for a fan assisted (170 for a normal oven).

Place 12 muffin pages on a muffin tray.

Whisk (cream) the softened butter and sugar together until it is lighter in colour and fluffy.

Add the vanilla bean paste, and eggs and whisk again until it is fully combined.

Combine the flour and baking powder and sift into the mix and gently fold in.

Add in the milk and mix gently.

Spoon into the muffin cases evenly.

Bake for 16 minutes. Then check to see if the cupcakes are fully cooked. They should spring back when the top is gently pressed, or a toothpick comes out clean.

If they need longer cook for a further 2 minutes and then check again.

Once cooked, cool on a wire tray fully before decorating.

Method for the Buttercream

Add the raspberries and lemon juice to a small saucepan and heat.

Squash the raspberries and simmer on a medium heat for approximately 10 minutes.

Place the mix into a sieve over a jug or bowl and press the fluid through with the back of a tablespoon.

So this:

You will end up with this:

Leave this to chill whilst you prepare the base of the buttercream.

Cream the butter and icing sugar.

Add in 1.5 tbsp of the raspberry mix and combine well. Add more if required. The rest of the raspberry mix can be used for something else.

Pipe the raspberry butter cream onto the cooled cupcakes.

Top with whole raspberries.

Chef’s Tips

You can use the rest of the raspberry mix on some Greek yogurt for breakfast, it’s yummy. You can add a little sugar to it if it isn’t sweet enough for you.

Cupcakes can be made a day of two in advance if you want to spread out the work. Store them in an air tight container for when you want to use them.

Unfrosted cupcakes can be frozen ready for use at a later date. They are much nicer fresh.

    these look yummy, i like making these with a lemon sponge too. A great tip for flavouring the buttercream, i’ve always used raspberry jam but it makes for a paler buttercream so will deff. be trying your method next time.
