Strawberry and Coconut Slices

Whether you are looking for an easy to make recipe to get the kids having fun in the kitchen, a delicious treat to indulge in at home, or an easy to make traybake to take to a school fete, this delicious treat is ideal. My strawberry and coconut slices are tasty and have a mix of textures that also make it a superb tactile recipe.

Tactile recipes are great for all of us. It’s not a term commonly used, so one you might not have heard before. These types of recipes are beneficial to us all as they enhance the sensory experience of eating by stimulating multiple senses. When we eat different textures it can help improve digestion. And, let’s not forget, these food can also be more visually appealing, triggering the digestive process before we even take our first bite!

Strawberry and Coconut Slices

Ingredients

For the shortbread Base:

225g butter – room temperature or softened

80g caster sugar

220g plain white flour

1/4 tsp finely ground sea salt

For the Filling:

300g seedless strawberry conserve – I like using the ones with the strawberry chunks in them

For the Topping:

1 medium egg

50g caster sugar

1 tsp Madagascan vanilla bean paste

1 tbsp plain flour

120g desiccated coconut

12g icing sugar

Method

For the Shortbread:

Line a baking tray that is approx 8.5 x 13 inches in size with greaseproof paper and grease with butter or an oil that doesn’t have a strong flavour.

Preheat your fan oven to 180 degrees.

Place the butter and sugar into a large bowl. Preferably using an electric whisk mix until it is light and airy and has lighted in colour (this process is called creaming).

Add the flour and salt and mix this until it becomes a crumbly dough.

Place this into the baking tin and press the mixture down evenly.

Cook for 16-18 minutes. Remove when the edges are slightly golden.

Jam Layer:

Heat the conserve gently in a pan to loosen it up. This makes it much easier to spread over the shortbread. Spread this all over the top of the shortbread to the edges.

For the Coconut Topping:

Place the egg, sugar, vanilla and flour in a bowl and whisk until smooth.

Mix the icing sugar with the desiccated coconut and combine well. Then add this to the egg mix and stir until mixed in evenly.

Spread this carefully over the conserve layer. I find that placing spoons of mixture around the base and then spreading can make it easier to get a good coverage.

Place the tray this back into the oven and cook for approximately 20 minutes. You know it’s ready when the top has a gorgeous golden colour.

Resist all temptation to cut them and tuck in whilst you wait for them to cool. You will burn, and your tastebuds will curse you.

Once cooled, place on a chopping board and slice into portions.

Chef Tips

Although strawberry conserve works incredibly well, you can mix it up and use any other conserve or jam you like.

These can be stored in an air tight container and should last up to 4 days. Ha, who am I kidding, that’s only if there is no one around to eat them!!!!

Keep these in the fridge and they will last a few more days. They can also be frozen for approximately 1 month.

Sweetness can be adjusted by adding more or less sugar to suit your taste.

I normally turn my tray half way through so that it cooks more evenly as one side seems to be hotter than the other.

    These look like the perfect mix of fruity and sweet without being over the top. I love that you kept the ingredient list pretty simple, and I really appreciate that you mentioned they freeze well—that’s such a bonus for planning ahead or saving extras (if there are any!)

      You may find that the only way to have any to freeze is to stick them into the freezer without anyone knowing!!! Otherwise, they probably won’t make it there.

      You could try flaxseed meal in place of the eggs. I haven’t made it with that though so don’t know how well it will work. Good luck x
