Strawberry and Vanilla Sponge Cake

This strawberry and vanilla cake is a gorgeous cake for the summer when strawberries are in season and at their sweetest. It’s an easy cake to make and one that will soon become a family favourite. This recipe is for a 3 layer cake so it’s a great one to make for parties whether you are hosting, or going to one. This strawberry and vanilla sponge cake will certainly be the talk of the event.

This cake has a gorgeous light, fluffy sponge that tastes wonderful. It’s one you can use with a wide range of fillings.

The cake batter be made and separated into 3 9 inch cake tins. Alternatively, split each ingredient by 3 and make each layer individually.

Strawberry and Vanilla Sponge Cake

Ingredients

For the sponge:

6 medium eggs at room temperature

315g plain flour

405g caster sugar

5.5 tsp baking powder

180g butter

180ml full fat milk

3tsp vanilla essence

For the Cream:

600ml Double Cream

 2-3tsp vanilla essence

3 tbs caster sugar add more if needed. You want this to taste like vanilla ice cream

Strawberry Jam

Good quality Strawberry Jam (I like using Bonne Maman)

Fresh Strawberries

600g approx fresh strawberries for inside the cake

Method

Sponge:

Grease and line 3 9 inch tins.

Gently melt the butter with the milk. Then set aside while you carry out the next stage.

Place the eggs, vanilla and sugar in a bowl and whisk (I used my Haier I-Master Series 5 Hand Blender) until it holds a figure of eight shape.

Slowly add and mix the milk and butter into the egg and sugar and combine well.

Combine the flour with the baking powder. Sift into the other ingredients and gently fold in.

Pour this into the greased and lined tin.

Cook at 190 degrees in a preheated (fan oven) or 200 in a normal oven for 10 minutes. It should be golden brown evenly on the top. Cover with foil and cook for a further 6 minutes. Then remove the cake from the oven and place of a heat resistant surface. Remove the foil and check if the  cake is cooked. To do this insert a metal skewer into the centre of the cake. if this comes out clean then the cake is cooked.

Leave the cake in the tin for 15 minutes then turn out onto a wire rack to cool.

Jam Preparation

Heat the jam gently loosens and becomes easier to spread. It does not need to bubble to be ready. You will see this loosening as you heat it.

Strawberry  Preparation

Large strawberries inside – cut downwards into 5 or 6 slices depending on how big it is. You don’t want slices too thin or too thick. Too thin, you don’t get enough flavour, too thick and the cake starts to slide about.

Assembling the Cake

Place the first and largest sponge circle on the bottom and add on some jam. Leave a gap around the edges so the jam doesn’t go down the sides and look messy.

Then add a layer of the cream.

Cut pieces of strawberries and place all over the cream. Then cut pieces to fit into any of the larger gaps.

Have the pointy part of the strawberries pointing in.

Unlike when assembling a strawberry pavlova, the strawberries do not overlap.

Then repeat with the next layer.

Finally place the last disc of cake on top.

Cover this with cream and also roughly cover the sides.

Top with whole strawberries and then place in the fridge to chill for an hour or so.

Chefs Tips:

I normally spilt this recipe into 3 and make each layer individually as I don’t have 3 9 inch tins and I don’t like putting more than one sponge at a time in the oven as it affects the way they look and cook. And don’t get me started on how awful I am at cutting a sponge evenly into two or three pieces.

Fold the flour gently into the mix to help get a lighter sponge. If you over stir the sponge will become denser.
