My Banana, Walnut and White Chocolate Cake is a super popular cake with my friends and family the combination of ripe sweet bananas, walnuts, and white chocolate combined in a fluffy sweet sponge is amazing. This version isn’t overly sweet and you can adjust the sweetness either way to allow for your preference. It’s an easy cake to make, and it can be made in advance for any occasion cutting your work load on the day. The cake is also a lovely addition to a lunch box for adults or children (minus the nuts if it’s going in a school packed lunch).

Banana, Walnut and White Chocolate Cake
Ingredients
3 small very ripe bananas – need to have bits of browning skin to give a better flavour.
180g softened/room temperature butter
300g plain flour
3 eggs at room temperature
125g caster sugar
2 tsp milk
2.5 tsp baking powder (level)
200g white chocolate
100-150g walnuts

Method
Line and grease a 2lb loaf tin.
Peel the bananas and mash until smooth.
Combine the butter, sugar and eggs and stir well.
Then add in the mashed banana and milk and stir well.
Sift the flour into the mix and fold in.
Add in the nuts, chocolate, and milk and combine.
Add the mix to the baking tin.
Cook at 180 degrees in a fan oven for 50-55 minutes.
Check if the cake is cooked though using a skewer.
If not cook for a few more minutes and then check again.
If completely cooked, place aside to cool for approx 10 minutes. Then turn out onto a wire rack to fully cool.
Chefs Tips
You can swap the white chocolate for milk chocolate if you want a change.
Use a chocolate bar you’ve chopped yourself into pieces as it works out cheaper than buying chocolate chips and you can add your favourite white chocolate to the mix that way.
It is not essential to use fresh bananas. You can use bananas that you have previously frozen, provided they have been thawed before use.

I’m not a huge fan of bananas BUT I think I would like this. The addition of white chocolate would make a difference for me.
The banana is combined into the sponge mix so it’s not chunks of banana just a soft fluffy sponge that doesn’t have an over powering banana flavour either.
