Not all foods need to be made from scratch to be healthy (ish) and tasty. Take my latest creation using veg chilli beanz from Heinz. This blend of beans and tomato, haricot beans, sweetcorn and red pepper makes a great topping and can be adapted for those that simply can’t do without some form of meat. This dish is simple to make and includes a whole host of ingredients that make sure you are getting fibre and a good range of vitamins and minerals.
Serves 1
Ingredients
2 handfuls of plain nachos
Half a tin of Heinz chilli beanz
Half a small avocado
Approx. 6-8 Jalapenos
35g grated mature cheddar
1 heaped tsp coriander
2 tablespoons of Greek yogurt
Method
Prior to making the dish, grate, cut anything that needs preparing so your beans don’t cool down before you serve.
You will need a medium handful of nachos, that’s just enough for a light layer at the bottom of a plate or adults bowl.
Next up heat your beans in a microwave or on the stove then pour these over the nachos.
Add the avocado.
Then the Jalapenos.
Sprinkle over the cheese and place the plate in the microwave (1000W) and heat at full power for approx. 1 minute until the cheese had melted.
Sprinkle over the coriander
Add the Greek yogurt and serve.
You can adapt the recipe easily increasing or decreasing ingredients and if you are feeling adventurous maybe add a few ingredients of your own.

Definitely going to try this but with a few ingredients changed to suit me. I found it hard to feel like making an effort when it comes to food.
