Simple Lemon Drizzle Cake

I didn’t realise how popular lemon drizzle cake was until I made one and took it along to a BBQ.  It was quite a large loaf, yet despite this, the whole thing vanished.  Since then I’ve made it a few times making adjustments each time to the recipe and every time it is quickly gobbled up.  Clearly popular with my friends and family, I thought I’d share this recipe with you all.

This is a really simple recipe.  You can either throw all the ingredients into the bowl or section them out to add a little more air into the mix for a slightly higher rise.

Simple Lemon Drizzle Cake

Ingredients

For the Cake

zest of 3 unwaxed medium lemons

210g caster sugar

 210g room temperature butter

3 medium eggs

 2.5tbp milk

210g plain flour

2 1/3 tsp baking power

For the Drizzle

Juice of 1.5 medium lemons

115g caster sugar

Method 1 – All in

Spoon mix into a lined 2lb tin.  I like to line mine with loaf tin liners but use greaseproof paper if I run out.

Measure out all the ingredients, combine the flour and baking powder add everything into a bowl and mix well.  Spoon into the tin.

Bake at 180 degrees for 35 – 45 minutes depending on your oven.

Check if your cake is ready by inserting a metal skewer.  If it comes out clean the cake is ready.

Method 2

Combine the flour and baking powder and set aside.

Cream the butter and sugar (mix with a blender until it is smooth and lightens in colour).

To the butter add in one egg and a tablespoon of the flour and mix.  Repeat with the rest of the eggs.

Sift in the remaining flour and stir in gently.

Spoon into a pre-lined tin and place in the oven.

Bake at 180 degrees for 35 – 45 minutes depending on your oven.

Check if your cake is ready by inserting a metal skewer.  If it comes out clean the cake is ready.

Drizzle

Just before the cake comes out of the oven prepare your drizzle.  You need this and the cake to be hot when you pour over the drizzle.

Juice the 1.5 lemons and add this and the caster sugar to a pan.  Heat gently until the sugar dissolves.

Once the cake comes out you need to piece it all over the top with a skewer.  Make sure the skewer goes all the way down.

Pour the drizzle evenly over the cake and set aside to cool.

The cake can be eaten whilst still warm.

Warning: 

This smells too good to resist.  It will be hard to let it cool down before attacking it.

My solution is normally to go out for 30 minutes to avoid the risk of a burnt tongue and fingers!!!!

    Yum! Lemon drizzle is my all time favourite cake! I have never actually made it though strangely as I love baking. This recipe seems really easy, I am going to make this with my son at the weekend.
