Vegetable and Bean Enchiladas (cheats version)

I recently wrote a recipe using a Heinz Beanz product Quick and simple Veg Chilli Bean Nachos which even though I say so myself is rather yummy!!!!!  Well I’m at it again lol but this time I am bringing you my recipe for enchiladas which is absolutely delicious plus super simple and quick to make which are both great too.  You don’t even need much ingredient wise as the beans already have quite a bit of flavour.  Here we have a dish that will really boost your fibre intake for the day as well as your calcium, vitamins C & K and zinc levels.

Ingredients

2 wholemeal wraps

1 tin of Heinz Veg Chilli Beanz

50g freshly grated mature cheddar

10-12 pieces of chopped jalapenos in brine (minus the brine, just dab them on some kitchen towel or give them a rinse)

Extra cheese for sprinkling at the end about 5-10g

1 tbs chopped coriander

Method

 Lay out the wraps and divide the beans between them equally taking care to strain out the juice as you will need this later (leave the juice in the tin).

Divide the cheese and jalapenos between the two wraps.

Roll the wraps and place in an over dish.

Pour over the bean juice from the tin.

Place in the oven at 190 degrees (that’s a fan oven, so about 210 degrees in a conventional oven) for about 10 minutes, times will vary depending on your oven.

When cooked sprinkle over a little more grated cheese and the coriander.

Serve with a mixed leaf salad.

      It sure is. I’m not sure how long it would take to make the beans from scratch but at least 20mins.
