Ingredients

Serves 1

100g Greek yogurt (The Best Authentic Luxury Greek Yogurt – Morrisons)

1 large peach (mine wasn’t the ripest but the sugar and cooking helped sweeten it)

1 heaped teaspoon brown sugar

Approximately 4g butter

A generous sprinkle of ground cinnamon

Method

Wash the peach, remove the stone and cut it into wedges. Keep the pieces reasonably chunky so they retain texture during cooking

Place a small frying pan over medium heat and add the butter and brown sugar. Let them melt gently, without burning.

Place the peach slices into the pan in a single layer and stir into the butter and sugar. Allow the peach to cook for 6-7 minutes, turning occasionally, until the fruit becomes tender and develops golden, caramelised edges. Whilst this is cooking you can prepare the yogurt.

Spoon 100g Greek yogurt into a bowl.

Top with the warm caramelised peach and any sugar juices left in the pan.

Sprinkle over the cinnamon.

Serve immediately and enjoy whilst the peaches are warm and the yogurt is cool and creamy.

Use ripe peaches, for the best flavour.

Don’t overcrowd the pan so each peach slice is heated and caramelised sufficiently.

Use a medium heat to allow the fruit to soften while the sugar caramelises gradually.

Don’t keep stirring, let the peach sit against the pan long enough to heat through.

Keep the slices chunky, to create a better contrast between caramelised edges and juicy centres.

You can add cinnamon during cooking if you prefer although leave it until the end.

If your peach is particularly sweet, you can also reduce the brown sugar slightly. A firm or less-ripe peach may benefit from a little more.

Is This a High Protein Peach Breakfast?
