Cooking Fajitas with Santa Maria

Today is Mexican Independence Day a fun-filled fiesta packed with fantastic food, music, friends and family.

Why not mark the occasion this year with Santa Maria’s selection of authentic and delicious Mexican selection.  You can indulge in tasty tacos, deliciously tasty fajitas and even some fabulous pulled pork.

We were sent a selection of products to enjoy.

Mr Squishy was extremely excited to see the tortilla chips!!!

My husband is looking forward to the pulled pork and I love the fact it is quick and easy to make.  I had a friend over to help me celebrate Mexican Independence Day this lunchtime and naturally I had to make a delicious meal for us both to enjoy.  Using quite a few items from the picture above I made some gorgeous fajitas with my own guacamole recipe and served some tortillas to add to the fun.

Guacamole

Ingredients

2 avocadoes

1 small clove of garlic finely chopped

1 small onion finely chopped

zest  of 1 lime

juice of 2 limes

1tbp chopped coriander

1tsp chopped pickled jalepenos

paprika (optional)

Method

Clean the skin off the avocados, remove the stone and mush with the back of a fork.

Add in all the other prepared ingredients and stir well.

Sprinkle over a little paprika to make it look pretty (optional)

Serve!

I served mine in a lettuce bowl, you need 1 baby gem lettuce for this.

Great for dipping tortilla chips in.

You can spice this up more with some Santa Maria Hot Sauce.

Fajitas

Ingredients

1.5 tbs Olive oil

500g chicken

3 small onions sliced

2 sweet peppers sliced

1 Pack of Santa Maria Fajita Seasoning Mix

Greek Yoghurt (as much as you need)

Santa Maria Salsa

Method

To Make the Fajitas simply coat the chicken in the oil and then use the whole pack of fajita seasoning.  Throw into a hot pan and stir fry.

Once cooked through add in the chopped peppers, cook for a few minutes then add in the onion and cook for a few more minutes.

When cooked through serve with soft tortillas, salsa, guacamole and sour cream or Greek yoghurt.

The fajitas were super simple to make and I am sure if I had allowed my daughters to do it themselves the’d have no problem so for those who don’t cook often or are nervous about cooking rest assured this is virtually fool proof!

      That’s a shame, I don’t think these are gluten free but they are just as nice wrapped in lettuce leaves.

    Chicken fajitas are one of my favourite meals, they’re just so fun, especially when you’ve got a group of friends round. When I was at uni we used to have everyone round and do a huge batch of them, we’d end up doing like 10 chicken breasts!
