Chinese Style Fish and Chips with Wasabi Mayo

I do love Fish & Chips although sometimes I also think it is nice to play around with classic meals to give them a new and different flavour.  One day I decided that I should play around with everyone’s favourite classic British dish ‘fish and chips’.  I thought that I might spice it up literally!  I decided to give it an Oriental makeover and even if I do say so myself it was a hit!  Take a look at this:

The is fabulously crispy on the outside but as you bite the fish goujon the soft, moist cod flakes apart.  The various ingredients including panko, shoaxing rice wine, chilli, ginger wasabi work well to give that Oriental feel to the dish.

Ingredients

Serves 2

280g Cod fillet

1.5-2 tbsp Shaoxing rice wine

2 Spring onions

1 tbsp grated ginger

Freshly ground sea salt to sprinkle

White pepper to sprinkle

12 tbsp panko breadcrumbs

2.5 tsp Chilli flakes (alter amount depending on the desired heat)

3.5 tbsp plain flour

2 beaten eggs

Cracked black pepper for seasoning

White pepper for seasoning

650g potatoes

Cracked black pepper for seasoning

Chilli flakes for seasoning

Freshly ground Sea salt for seasoning

4 tbsp of Mayonnaise

2 tsp wasabi paste

Pinch of freshly ground sea salt

2 separate pans / woks with enough vegetable oil to deep fry

 

Method

Place the cod in a deep dish and pour over the rice wine.  Slice up the spring onions and toss these over the cod.  Add the grated ginger a sprinkle of freshly ground sea salt and white pepper.  Cover (Clingfilm) and place in the fridge to marinate for a few hours.  You can always prepare this part in the morning or night before and finish the rest you are ready to eat.

Place the panko breadcrumbs on a flat dish.  Add in a sprinkle of freshly ground sea salt, white pepper and the chilli flakes.

Beat the eggs gently in a small bowl.

Remove the cod from the fridge and slice into fingers.  Place each in the flour and coat then roll in the beaten egg  Allow any excess egg to drip off before coating with the panko.  I normally fill a plate with these and then fry.  Drain on kitchen towel to remove excess oil.

Wash the potatoes and slice into chips, you can leave the skin on.  Fry the chips and then drain on kitchen towel to remove excess oil.  Once you have removed the excess oil season the chips with cracked black pepper, chilli flakes and the freshly ground sea salt.

The mayonnaise can be combined in advance and set aside in the fridge whilst the rest is being made.  To make this simply place the mayo into a small bowl, add the wasabi and pinch of salt and mix well.  This can be transferred to small serving dishes after.

    This is something I would never have thought of doing myself.
    Fish & Chips is what I eat when I go out for meals with my family, as I always stick to what I know I’ll enjoy rather than take chances but after looking at this I’m going to give it a go.
