As you may be aware from my Creamy Smoked Salmon Wholemeal Pasta recipe I looooove Smoked Salmon.
The other week I had a little time to play in the kitchen and came up with a super simple, quick and tasty dish that I am sure you will all love too. A unique recipe as far as I am aware, it is full of all sorts of nutrients that will help lower cholesterol, the risk of heart disease, help you fight of colds, fight cancers, reduce inflammation, prevent eye-related problems, improve brain function, reduce the risk of depression, the list goes on I should probably mention it’s also low in calories. I am a firm believer in treating illnesses and looking after the body naturally where possible and this sort of meal helps you do just that as you can see. Food for me also has to be full of flavor, I can’t eat bland food it’s boring so I try to make sure my recipes are full of flavour. Here is my recipe, I hope you like it.
Serves 1
Ingredients
250g fresh spinach
100g smoked salmon
2tsp Dijon
1tsp olive oil
1-1.5tbs milk
Freshly ground black pepper
Fresh shavings of grana padano
Method
Make the dressing by combining the Dijon, milk, olive oil and fresh black pepper and stir well until smooth.
Cut the salmon into bite sized pieces.
Wash the spinach then place it in a microwavable bowl, cover with cling film and place in a 1000w microwave at full power for 1 minute. Then heat for a further 1 minute.
Strain and then transfer the spinach into a nice big plate/bowl.
Sprinkle over the salmon pieces. (use as much of it as you like you don’t need to use it all)
Drizzle over the dressing and added the grana padano.

Ooh this looks yummy! As does the pasta. I love salmon and would love to use it in more meals, unfortunately the Mr only likes cold smoked salmon.
You could always serve the dish cold then there shouldn’t be a problem 😉
