Lobster and King Prawn Pasta

Lobsters and King Prawns are two of my favourite things although as a food lover I must admit my list of favourites is pretty extensive.  Simply the thought of them has me salivating and you don’t need to do much with them to create great tasting dishes.  I love to combine lobster and prawns in food whether it’s a salad, curry or even a pasta dish.  They are equally delicious simply dipped into a tasty garlic mayo or garlic and coriander butter.  I also love pasta although I generally only buy wholewheat rather than white pasta and try to not eat it too often as it isn’t the most nutritious food.  Over the Christmas period I thought it was about time I made a recipe with lobster ad king prawns and a few other items that make the dish taste simply amazing.  This is a really easy recipe to make and is full of flavour.

Serves 2

Ingredients

500g raw king prawns

500g cooked lobster (in shell)

220g wholemeal pasta

25g freshly cut coriander

2 cloves of garlic

60g butter

1 large pinch of freshly ground sea salt

1 large pinch of freshly ground black pepper

 Method

Remove the lobster from the shell, make sure you don’t miss the claws as there is a lot of meat there.  Cook the prawns and then cool quickly and set side.  Cook the pasta.  Whilst the pasta is cooking cut the coriander and garlic and set these aside.  You need to cook the pasta until it is still has a slightly firm texture but not hard to bite (Al dente).  Strain the pasta and then add the butter to a hot wok or large deep frying pan.  Toss in the garlic and fry for one minute.  Then add the prawns and lobster and fry for another two minutes before adding the salt, pepper and giving it a good stir prior to adding the pasta.  The coriander can be sprinkled on the top once the meal is divided between two or added and stirred in before serving.  It is best eaten whilst hot so hurry and tuck in as this cools fast!!!!!

Chefs tip: a good sprinkle of parmesan also goes well with this.  Add the cheese just before serving.
