There are few that don’t know that I have a sweet tooth. I am often to be found pottering about in the kitchen, combining this sponge with that topping and sometimes adding in a new ingredient (new to me that is). I had been talking with some friends about a savoury snack with feta cheese and coriander and then my mind naturally wondered over to thinking about a sweet version.
I then decided to make a sweet snack consisting of filo pastry with Anari (which is a form of soft cheese) rolled and deep fried. This alone would have been a bit bland so to add some flavour I added rose water (from Steenbergs Organic), caster sugar and cinnamon.
To make approximately 18-20 of these you will need:
1 pack of Filo
3-4 tbs Caster Sugar
2 tsp Rose Water
Icing Sugar to dust
Vegetable Oil for frying
Put the cheese, sugar, cinnamon and rose water in a bowl and mix well.
Cut each filo sheet into 2, then take approximately 2-3 heaped tsp of the mixture and spread along the filo on one end. Roll and then deep fry making sure that your oil is hot enough but not too hot, to check put a little piece of the filo into the oil and see if it bubbles but doesn’t darken too fast.
I would suggest putting them onto some kitchen towel to remove as much oil as possible and then when you are ready to serve dust with icing sugar.
