Olive Puffs

Olives and puff pastry come together beautifully in my latest recipe. This is recipe can be made in either an air fryer or oven although having found it so easy in the air fryer I just used that for making these. These gorgeous olive puffs combine delicious flavours of the Mediterranean to create a light puff pastry stuffed with tasty kalamata olives, coriander and onions. This recipe can be adjusted to allow for the amount you want to make. My recipe uses 2 rolls of Just Roll ready rolled puff pastry and makes around 18-20 of these delicious bites, but it can be adapted for 1. A quick word of advice, you’ll find one isn’t enough unless you are making these just for you!!!

Ingredients

40-50g fresh coriander

3 medium white onions

180-200g pitted Kalamata olives

Olive oil (room temperature)

2 Just Roll ready rolled puff pastry rolls

1 medium egg

Rainbow pepper (I have a peppermill that grinds it when required)

You will also need a round cutter that is 11cm

Method

For the Filling

Clean and cut the onion into small pieces.

Add a drizzle of olive oil to a medium heat pan and swirl it around to cover the pan before adding the onions. Cook until browned (not burnt).

Then set this aside to cool.

Slice the olives into small pieces. By the time you have done this and the next step the onions should have cooled.

Wash, dry then cut up the coriander into smallish pieces.

Add the olives and coriander to the onions and stir well.

Add freshly ground rainbow peppercorns to taste.

Creating the Puffs

Whisk your egg in a small bowl by hand and set aside.

Open up the puff pastry carefully and unroll.

Using a clean round cutter, cut 6 rounds.

Place the scraps in a small bowl, cover and place in the fridge.

Add approx. 1-1.5 heaped tsp of the mix to one side of each of the rounds. You want it to be full of the flavourful mix but so that it can still be sealed.

Using a small amount of the whisked egg, add a little to one half of the round around the edge where the filling side is.

Pull over the empty side of the round and press around the edges to seal. (see chefs notes for sealing advice)

Once you’ve made 5/6 add them to your air fryer. I have a series 5 Haier which will hold between 5 and 6 each time.

Line the bottom of your air fryer with greaseproof paper.

Air fry on Air fry manual setting at 190 degrees for 7-9 minutes. Flip them over then cook for a further 4-5 minutes at the same temperature. Check to see if they look fully cooked. If they are ready remove and replace the greaseproof paper and add the next batch. If not cook for a further 2 minutes and check again.

Whilst the first batch is cooking, you can roll out the puff pastry scraps and cut more rounds to prepare the next batch. I can normally get between 3 and 5 depending on the thickness I have rolled the pastry and whether it’s scraps from 1 roll or 2. Save any scraps from roll 1 to combine with scraps from roll 2.

Chef Tips

With the puff pastry, keep this refrigerated until you needed it. You need to leave the other roll in the fridge whilst you make each batch. It will go sticky if left out at room temperature too long.

If the roll won’t open without cracking, leave it to warm for a couple of minutes and then try to unroll gently. Repeat this until the whole roll is open and flat.

If the pastry moves around when you try to press down edges you have added too much egg. Either open and dab it to remove excess, or leave it for about 6-10 minutes and try again.

If using an air fryer. As the first batch cooks, start preparing the next.

The best kalamata olives are from the Greek/Turkish shops. They are loose, in buckets in brine.

You don’t need salt,  the olives have plenty.

Olive oil

Olive oil is great to be added to various food and also for cooking as long as you don’t cook at very high temperatures. It has monounsaturated fatty acids (MUFAs). These increase good fats HDL’s and reduce bad fats LDL’s in the body. It can help reduce plaque build up in arteries, help maintain healthy bones, ease inflammation and more.

Kalamata Olives

These contain olive oil which has the health benefits mentioned above. They also contain gallic acid which may to help repair nerve cell damage caused by Alzheimer’s.

Onions

Onions are often overlooked when it comes to health benefits. They are antioxidant rich so may help prevent cell damage, reduce inflammation and boost the immune system. Studies have shown they may be able to improve heart health, reduce the risk of some cancers, improve bone density, regulate blood sugar and soooo much more!!!

Coriander

With it’s high vitamin K content, coriander can help prevent blood clots. It can also help reduce inflammation in the brain, improve memory, reduce anxiety, help with stomach and intestinal problems and that’s to name just a few things. Eat more, it’s awesome!

Rainbow Pepper

High in antioxidant and anti-inflammatory properties, this makes a great addition to make dishes. They can also help boost HDL (good cholesterol), control blood sugar and fight cancer.

I hope you enjoyed reading my recipe for Olive Puffs. These are really tasty and full of healthy ingredients. Due to the puff pastry, it’s best not to overindulge although the other ingredients balance out the LDLs in this ingredient to a degree.
