I loooove cheese with a passion and anyone that knows me well will be aware that I don’t do things by halves so when I sprinkle cheese over my carbonara or Spaghetti Bolognaise it’s not really a sprinkle but more like a snow storm!
What better than a gorgeous dish of Macaroni cheese with Chorizo to enjoy both tasty Mature cheese and also the amazing flavour of the tasty Spanish sausage.
Ingredients:
380g Frusilli (dried)
90g Butter
90g Plain Flour
900ml Milk
150g Mature Cheddar grated
100g Parmesan grated
200g Chorizo chopped
3tsp Wholegrain mustard
2 tsp English mustard
Nutmeg
A splash or 2 of Milk
Salt and pepper to taste
Method
Cook the pasta then cool and strain it.
Melt the butter then stir in the flour and cook for a few minutes. Add in the milk slowly and stir well between additions.
Cook over a low heat for about 10-15 minutes stirring well. It should become thick and smooth. If it is lumpy then you have not added the milk in slowly enough, practise makes perfect with this.
Cook the chorizo for a minute or 2 until it starts to brown a little and the oils start to be released.
Mix the cheeses and add about half to the pan with the sauce and stir in well with some grated nutmeg and both mustards.
Add the cooked pasta and stir in well then add the chorizo, salt and pepper and a splash or 2 of milk and combine.
Spoon into an oven proof dish and sprinkle over the remaining cheese.
Cook under the grill for about 10-15 minutes.
This dish is best served hot so serve once cooked.

This sounds like a great combination. I would love to mix it up and make our mac n cheese a little different.
It does add a good amount of flavour when you add chorizo.
