Pulled pork can normally take 3-4 hours to make but this quick and fabulously simple recipe which basically involves throwing ingredients into a casserole dish and letting the oven do the hark work is simply divine and only takes 2 hours to cook. Here is a quick and simple recipe that is not only tasty but also nice and healthy too!
BBQ Pulled Pork
Ingredients
Serves 3-4 depending on portion sizes and accompaniments
700g Pork loin
2 medium white Onions sliced
4 medium Garlic cloves crushed
1 cup Chicken stock / 250ml
1tbsp dark brown Sugar
1tsp Chili powder
1tsp Salt plus more if required
½tsp ground cumin
1/2 tsp ground cinnamon
Approx. 180-200ml readymade Barbecue sauce
2 baby gem Lettuces (you will need the outer large leaves only)
Method
Cut the pork loin into 3 equally sized pieces (this reduces cooking time). Placed the pork in an oven proof dish and throw in the onion, garlic, sugar, chili, salt, cumin, cinnamon and then pour over the stock. Cover with foil and a lid and cook at 130 degrees in a fan oven (140-150 degrees for a conventional oven) for approximately 2 hours, keep an eye on it as ovens cooking times vary. Once cooked, remove from the oven and shred with a fork then stir in the barbecue sauce. Remove the outer leaves of the lettuce and give them a rinse. You will need two per serving, make a bowl shape into which you will need to place some of the pork. Serve with a salad.
I like to serve it with a Mexican style salad for an interesting array of flavours. Amazingly healthy yet very satisfying this dish really is one you want to try!
