Nandos Style Fully loaded Nachos

Anyone that loves the Nandos fully loaded chips is sure to enjoy this recipe. This is a similar style recipe but with a few adjustments that add more flavour and texture to the dish!!! It’s great with chips and also with tortilla chips. My Nandos Style Fully loaded Nachos are quick and easy to make and great to share. They can be part of a spread on a movie night or great when you have a party.

Nandos Style Fully loaded Nachos

Ingredients

600g chicken breast

1tbsp avocado oil

1-2tbsp Nandos peri-peri lemon and herb sauce (extra mild)

Nandos peri-peri garlic sauce (medium) to drizzle

2 spring onions

140g pitted black olives

2-3 tbsp jalapenos

270g tortilla chips (my favourites are the cool ones – Asda brand – and yes, I’ve tried a fair few)

approx 270g mature cheddar

2-3tbsp coriander

Nandos Peri peri spice to taste

2 avocadoes – smashed

Nandos Style Fully loaded Nachos

Method

Preheat your oven to 200 degrees.

Place the nachos on a baking tray. Spread them evenly.

Cut the chicken into bite size pieces. Heat up a pan, add in the avocado oil. Add the chicken and cook until it starts to colour. Then add in the Nandos peri-peri lemon and herb sauce and toss well. Take off the heat and set aside.

Place the tortilla chips onto a lined baking tray and spread evenly.

Then sprinkle over half the cheese, sliced olives, chopped jalapenos and cooked chicken pieces, and then the rest of the cheese evenly over the top.

Place the nachos in the oven for between 8-10 minutes. Keep an eye out so they don’t burn.

Once cooked remove from the oven.

Sprinkle over the spring onion and coriander and then add a drizzle of Nandos peri-peri garlic sauce. Then sprinkle over some Nandos peri peri spice.

Either add lumps of the smashed avocado to this, or serve it in a separate dish so each person can add their own.

Chefs Tips:

As nachos aren’t the healthiest product, adding some of your favourite healthy ingredients to the dish can really jazz this dish up and add a healthier aspect to it. You can add on some chopped tomatoes with chopped red onion, a dollop of Greek yogurt, some black beans in a spicy sauce, guacamole etc. You can even mix up the cheeses and add a selection rather than just cheddar. The options are as varied as your taste.

For a vegetarian version: simply don’t add any chicken or use a vegetarian alternative

For a vegan option: switch the cheese to vegan cheese and use a vegan chicken alternative.

Health Benefits

Chicken

Chicken contains vitamins B6, B12 and niacin. It also contains minerals; magnesium, selenium and zinc. This high protein food can help strengthen bones and build stronger muscle. Chicken is low fat so ideal as part of a low calorie diet.

Fresh Avocado

Avocadoes are pretty amazing and can benefit us in a wide variety of ways. They contain potassium that helps to lower blood pressure and magnesium which help regulate blood sugar levels. Avocadoes contain both monounsaturated and polyunsaturated fats which help to lower bad cholesterol. As they contain fiber, avocados help with digestion and protect against some diseases of the digestive tract. They also keep you feeling fuller for longer. As if that wasn’t enough, they also have a protect against cardiovascular disease.

Coriander

This tasty help not only boosts the flavour of a meal it also has a wide range of health benefits. It contains vitamin A, C, and K, and also calcium, iron, magnesium, and potassium. It is thought that this herb can help lower blood sugar and blood pressure, it is also believed to help with skin elasticity, reduce anxiety, help with digestive issues, reduce pain and inflammation, promote sleep and more.

Mature Cheddar

We all know that cheddar contains calcium that we all need to help build and maintain healthy bones. The calcium helps bone repair and can help to prevent osteoporosis. It is also helpful for building and maintaining muscle due to the protein content. It is thought to lower bad cholesterol and boost good cholesterol. The cheese also contains zinc that supports the immune system and vitamin B12 and choline. These support brain health as well as cognitive function.
