Not all the food that I make is straight from scratch.  Sometimes I use handy readymade items to create tasty treats for myself and my family and friends to enjoy.  One such treat albeit savoury is something called a Loukanikopitta.  Simple to make and extremely tasty these handy mouth size morsels (depending on how big you choose to make them) will remind you of lazy days in the sun in the Mediterranean.

The ingredient list is nice and short:

1 medium egg beaten

1 pack of jus Rol puff pastry

1 pack of Loukanika – Spicy Greek sausages (6-7 per pack) – found in most Greek/ Turkish supermarkets.

Cut the pasty and roll out into pieces that will just cover the loukaniko when folded:


Add a little of the egg at the side and fold over the pastry.  Cut into 4-6 pieces and place on a foil lined baking tray.


 When you have made as many as you need brush each roll with egg and place in a fan oven at 180 degrees for 18-20 minutes.


Once a golden colour has formed remove from the oven and cool.


These will last in an airtight container in the fridge for 3-5 days or about 10 minutes once the little ones know they are there!  You can also freeze them and use them in packed lunch boxes or a quick tasty snack.
