Sumac Lamb with Red Cabbage Salad and Tzatziki

I am extremely fussy when it comes to meat especially lamb as I really don’t like the taste of fat in meat.  What I do love is moist and tender pieces of lamb and just the thought of it gets my taste buds over-excited.  For those that like gorgeous-tasting food I have an amazing recipe to share.  This dish was created thanks to my love of lean lamb and is not only great for controlling calorie intake it is also quite impressive when served to guests and the key is the right cut of meat.  You don’t have to be a master chef to recreate this and when you see how simple it and how delicious it tastes you will be making it quite often. Here is how to make my Sumac Lamb with Red Cabbage Salad and Tzatziki.

Sumac Lamb with Red Cabbage Salad and Tzatziki

Sumac Lamb

Ingredients

½ tsp chilli flakes

1tsp Sumac

1 tbsp Oilve oil

Freshly ground black Pepper

Freshly Ground Sea Salt

450g shoulder of lamb fillet

For the Salad

150g baby plum tomatoes or 2 medium salad tomatoes

100g Cucumber

Half of a medium white Onion.

10g Parsley

115g Red Cabbage

60g Feta

10 Black Olives

Tzatziki

200g Strained Yogurt or Greek Style Yogurt

2 cloves of Garlic

2.5tsp Fresh Mint

35g Cucumber

Paprika

Method

Firstly begin on the tzatziki so that the garlic and mint flavours can infuse into the yogurt.  Finely chop the garlic and mint and add to the yogurt.  Remove the soft watery centre of the cucumber and chop up the outer part into small pieces and add to the yogurt.  When you are ready to serve sprinkle a little paprika on top.

Remove any fat that is easy to get to then cut the lamb into bite size cubes and place in a bowl.  Add the olive oil, chilli flakes, sumac, salt and pepper, stir well then thread onto 4 metal skewers.  Cook at 200 degrees or 190 degrees in a fan oven for 12-15 minutes turning half way through, it should still be pink on the inside when finished.  Allow to sit for 6-7 minutes.

To make the salad halve the baby plum tomatoes or cut the salad tomatoes into bite sized pieces and add to a fresh bowl.  Chop the cucumber, onion, parsley, cabbage and add these to the bowl.  Cut the feta into bite size pieces, throw in the olives then gently mix together.
