Spaghetti Carbonara Recipe

 Spaghetti Carbonara

This is one of my favourite recipes.  I Tried this dish in many different restaurants and then decided to make my own version.  I have been using this recipe for years and it is a dish often requested by family and friends when they come to visit.  This a simple yet delicious meal that really is one of my top 10 comfort foods.
I don’t use eggs to make mine when making my spaghetti carbonara. I prefer to use cream to make it decadently rich and creamy.
 Spaghetti Carbonara

Serves 2

Ingredients:

220g wholewheat pasta

8-10 rashers of bacon use either Back Bacon Dry Cure or Back Bacon Oak Smoked

150ml double cream

30- 40g Pecorino Romano plus extra to sprinkle over when serving (where possible always use freshly grated cheese, it tastes so much nicer than the pre grated cheese which is often quite bland)

1 small white onion or red

1 small clove of garlic

Olive oil or butter

Freshly ground black pepper and salt (if required)

 

Method:

Add the spaghetti to a pan of hot water and cook until it is al dente (cooked until it is firm but not hard).

Whilst the spaghetti is cooking, pop the bacon under the grill until it is cooked but still moist.  Remove all the fat and chop into bite size pieces.  Chop up the onion and garlic, pour a little olive oil or put a little piece of butter into a large frying pan and cook the onion over a medium heat until it starts turning golden then add the garlic and cook for a further two minutes stir in the cream.  Leave the cream to gently simmer for a few minutes before adding in the freshly grated Pecorino, stir in well and the sauce will appear to thicken.  Add the chopped bacon, mix in then add a little black pepper and salt if required.

Divide the pasta between two bowls and pour over the Carbonara sauce, sprinkle over the remaining cheese and sit down and enjoy!

Other Options

I tried this dish in many different restaurants and then decided to make my own version.  I have been using this recipe for years and it is a dish often requested by family and friends when they come for dinner.  This is a simple yet delicious meal that really is one of my top 10 comfort foods.

But we haven’t finished yet, this dish is also quite versatile so for those that don’t eat bacon, prefer chicken or simply want a slightly leaner version you can substitute the bacon for grilled chicken although if you do I would suggest adding a little salt.

And for those that like bacon and chicken why not use both for a very filling yet tasty meal.  Have fun cooking!

I always use wholewheat pasta where I can as it is far healthier and better for those watching their weight.  Wholewheat pasta contains complex carbohydrates.  The body takes longer to convert these to sugars than the simple carbohydrates found in white pasta so they are more likely to be burnt off before the body converts the sugars to fat for storage.  Make sure you give it a try.
