It’s barbecue season or at least when the weather decides to behave itself and I love kebabs as they are so flexible whether you fancy meat, fish, chicken, veg or even halloumi you can quite easily create a gorgeous tasting dish that is even more mouth-watering with the addition of the smoky flavour from the barbecue. A gorgeous and simple dish to make is Citrusy Oregano and Garlic Pork Kebabs not only does it taste great but as it cooks it really does get you excited about eating it with its enticing aroma. This delicious recipe is fast and easy to prepare and as a backup you can always pop it under the grill if the weather decides to misbehave.
2 Cloves of Garlic
2 tsp Olive oil and more for serving
Zest of 1 Lemon
2 tsp Lemon juice
½ tsp Freshly ground sea Salt
1 tsp freshly ground black Pepper
1.5 tsp Oregano
230g Pork loin (cubed)
2 white Onions
1 Red Pepper
2 handfuls of mixed leaf Salad, washed and dried.
Crush the garlic, grind the salt and pepper, zest the lemon and add this with the lemon juice to the bowl that you will be marinating the pork in. Then add the olive oil, oregano and pork and mix well. Leave to stand at room temperature for about 15-30 minutes.
Whilst this is marinating cut the pepper in half and then each half into 3 slices and each of these into 3 again to make bite sizes pieces. Cut each onion in half then halve again. With each piece pull the front half of the onion out to separate it so it is not too thick.
Thread the pork, pepper and onion alternating on a skewer. There should be enough for 4 skewers. Grill for approx. 8-10 minutes. It also tastes great on the barbecue.
Heat the Pittas but not too much as you do not want the salad to wilt then put a handful of the salad in each, add the meat and vegetables from 2 skewers t each pitta and drizzle each with a little olive oil. Serve immediately.
