Ice cream is such a great treat to enjoy at home and is much easier to make than you may think. I made a gorgeous Amaretto Ice Cream with Caramelised Pecans without an ice cream maker and it was such a hit I decided to share my recipe. The great thing is you don’t need an ice cream maker. For those that love ice cream and want to try something a bit different you will love my rose ice cream. This uses evaporated milk to make a delicious creamy ice cream you won’t be able to get enough of. Once you’ve made ice cream at home you’ll love it so much more than store bought.
Amaretto Ice Cream with Caramelised Pecans
The basic recipe I was given:
free-range eggs (you’ll need 4, separated)
100g of caster sugar
300ml double cream
a teaspoonful of vanilla extract
My recipe:
For the Caramelised Pecans
200g halved pecans
40g butter
100g caster sugar
For the Ice Cream
4 free-range eggs (you’ll need to separated the whites and yolks)
100g of caster sugar
300ml double cream
2 tbs Amaretto
Method
For the Nuts
Throw the nuts, butter and sugar into a pan and heat.
Stir and make sure the sugar crystals all dissolve. Once the liquid starts turning golden brown mix and take off the heat.
Pour onto a baking tray lined with grease proof paper and allow to cool and harden.
There is more than you should need for this ice cream recipe here but this can be stored in an airtight container for a few days at least and is yummy to nibble on.
Method
How to Make the Ice Cream
Whisk egg whites in a large bowl until thick and stiff so that it looks a little like clotted cream when the whisk is removed. Slowly whisk in the caster sugar and keep whisking until the mixture is stiff and glossy.
Fold the cream, egg yolks and Amaretto in so that they are all well combined and then slide the mixture from the bowl into a freezer container (which could be anything such as a loaf tin, baking tray or Tupperware box) .
Add in 100g of the caramelised pecans and press into the ice cream. Sprinkle over another 40g-50g on top.
Cover with cling film before putting into a large fridge freezer drawer so there’s plenty of space for it to freeze.
Now for the hard part… Wait six hours (or until the so-good-it’s-sinful stuff is solid) and then pull from the freezer for a frozen treat!
And this is just the tip of the iceberg (pun intended!) Your homemade goody will work with a range of summery desserts from fresh fruit, to trifle, jelly and cream tarts.
Did it Work?
It sure did!!!
The ice cream tasted great, it was smooth and creamy with delicious sweet crunchiness from the caramelised pecans. I am guaranteed to make this again and also experiment with other flavours!
