Roasted Sweet Peppers with Olive Oil and Garlic

I love using olive oils in my food and also that there are various ones to select from.  Olive oil is a fabulously healthy oil.  It contains antioxidants and polyunsaturated fats which we all need in our diet and has numerous health benefits including maintaining healthy cholesterol levels, reduce the risk of breast cancer, reduce the risk of developing rheumatoid arthritis and much more.  I love to drizzle olive oil over salads just before they are served.  I have just tried a new olive oil (new to me) from a company called Olivence and I loved it so much I decided to make a recipe and share it with you using their oil.  I hope you love it as much as I do.

6 sweet peppers (various colours to make it look pretty)

3 tbs of olive oil

DSC027042-3 cloves of garlic

1.5-2tbs olive oil (for the drizzle)

Sea salt flakes

Method

Wash the peppers, halve and then cut each half into 3.

Drizzle over 3-4tbs of olive oil and cook for 20-25 mins in a fan oven at 190 degrees (200 degrees in a conventional oven).

Whilst this is cooking pour the 1.5-2tbs olive oil into a small bowl and grate the garlic in.  Stir well and allow to infuse whilst the peppers are cooking.

Once the peppers have cooked place them in a serving bowl, drizzle over the oil infusion and sprinkle over sea salt flakes to taste.

  1. Oh I just adore peppers – I go through about two big bagfuls every week! My fave way is like this and added to couscous – cooked with olive oil of course!

    1. This is so simple to make and you can make it in the mornig whilst your getting ready and eat it with lunch, dinner and even the following day.

  3. We all love roasted peppers with olive oil but can’t do the garlic any more but love the aroma of it and the beautiful colours brighten up meals.

    1. Maybe try cooking the garlic as it may be easier to stomach.

    1. They are great on their own but I must admit I do love the addition of the garlic and olive oil.

    1. Garlic is a must but don’t forget the sea salt, it brings out the flavour.
